This is the aubergine cake I made for my mum’s birthday. She loves aubergines so I thought, why not! That being said, the cake was not aubergine flavoured, just aubergine shaped. I tried an aubergine cake, but wasn’t happy with how it tasted… Oh well! you try and learn! So this was a red-velvet chocolate cake with salty caramel swiss meringue buttercream!
Had lots of fun making it, especially the stalk and the slices of aubergine which had lots of different lustre dusts on it to replicate the real colour of the aubergine.
